Weekly Meal Planning

As a family, we eat out way more than we should. But when I have time, I do like to find new healthful recipes that are quick and easy to make. Tonight is an eat-in kind of night. We're having all-natural chicken sausages with asian coleslaw.


The asian coleslaw is delicious, but I can't take credit for the recipe. I've stolen it from www.allrecipes.com.

Asian COLESLAW
Ingredients:
6 tablespoons rice wine vinegar
6 tablespoons vegetable oil
5 tablespoons creamy peanut butter
3 tablespoons soy sauce
3 tablespoons brown sugar
2 tablespoons minced fresh ginger root
1 1/2 tablespoons minced garlic
5 cups thinly sliced green cabbage
2 cups thinly sliced red cabbage
2 cups shredded napa cabbage
2 red bell peppers, thinly sliced
2 carrots, julienned
6 green onions, chopped
1/2 cup chopped fresh cilantro
Directions:
1. In a medium bowl, whisk together the rice vinegar, oil, peanut butter, soy sauce, brown sugar, ginger, and garlic.
2. In a large bowl, mix the green cabbage, red cabbage, napa cabbage, red bell peppers, carrots, green onions, and cilantro. Toss with the peanut butter mixture just before serving.

For the rest of the week, I'm planning on making:

Tuesday - Organic Teriyaki Chicken with Garlic Sauteed Spinach
Wednesday - Creamy Shrimp Rolls
Thursday - Vietnamese Spring Rolls with Peanut Dipping Sauce

  1. yummmy nomnoms <3 looks good :) haha you should do what those food stylists do and take a skewer, heat it up and put burn lines on the sausage to make it look like it's fresh off the grill haha :p
